One of my favorite salads is Caprese. Nothing tastes more like summer to me than fresh flavors. And what an amazing combination with fresh picked basil and tomatoes with locally made buffalo mozzarella. We have a local dairy that makes their own mozzarella, and it is wonderful. I slice up the tomato and cheese and break off fresh leaves of basil. You can smell the salad from across the room.
Last year I bought basil and made it through about half the bunch. And put the left over in a glass with water for about 2 weeks. Those stocks sprouted roots and I planted them in the backyard and had fresh basil from that one batch for the rest of the summer! YUM!
I like the colors and what you used to show them! Fresh tomatoes with herbs are a favorite snack in our house.

Oh, that looks soooo good and just screams summer! We get homemade mozzarella at the farmers market and it is delicious.

So are you telling me that your basil is already growing or did you cheat and use a picture you took last summer? THat salad does look yummy... although the wine glass is distressingly empty!

I love caprese salads. Part of the reason is the wonderful colors in the tomatoes and basil. Great choice for this week.

I am thinking of trying what you mentioned with the basil,...would love to have some fresh basil in my yard, but I may have to wait until after summer - it's too darn hot here in the desert for anything but prickly cactus for the next 6 months!!

ReplyDeleteOne of my favs! I don't think there's anything more fresh looking or tasting than a green, white and red salad! Perfect colors and flavors. Here in Israel fresh mint is a common ingredient in fresh salads, with tomato. I have a recipe or two on my blog you might like to try. Happy eating!!

ReplyDeleteMmmm! Caprese is a beautiful source of rich red and green. It is one of my favorites too and so easy to whip up! So perfect with wine and good company. Very cool about growing that basil last year.

You are making me so hungry! I love caprese salad. I also like to do an appetizer caprese. Cherry tomato, a sprig of basil, and a mozzarella ball poked with a toothpick and you have the perfect bite sized caprese salad!
